homemade snack foods

I try to avoid buying processed foods, and sometimes I struggle with what to serve for snacks. Taking my friend, Kati's example, I decided to make my own wheat thins. The only problem is that they're so good they don't last long! Definitely easier to buy a box of crackers - but where's the fun in that?

(Jason got me this cookbook for Christmas and I love it!)
  • 1 1/2 cups dried chickpeas, soaked overnight and boiled until very soft or 1 15-oz. can of chickpeas
  • 3 medium cloves garlic, minced
  • 1 1/2 teaspoons salt
  • dash of tamari
  • juice of 2 medium lemons
  • 3/4 cup tahini
  • 1/4 packed cup finely minced fresh parsley
  • lots of freshly ground black pepper and cayenne pepper to taste
  • 1/4 cup minced scallions

Throw everything into a food processor and blend until it has a smooth consistency, adjust flavors to taste.

2 cups whole wheat flour
1/2 cup sugar
1/4 tsp salt
2 Tbsp butter (at room temperature)
2/3 cup milk
salt (or other dried herbs and seasoning) for sprinkling

1. in a large bowl, combine the flours, sugar and salt. cut in the butter and mix until you have a coarse meal.

2. slowly blend in the milk just until you have a dough that will hold together. divide the dough into 2 pieces for rolling.

3. roll the dough out on a floured surface to about 1/8 inch thickness. sprinkle with salt and roll over lightly with the rolling pin again. cut the dough into 2×2 inch squares. poke each square several times with a fork.

4. transfer squares to an ungreased baking sheet and bake at 325 F for 20-25 minutes, until crackers are golden brown.

I have a different Moosewood cookbook, I'll have to try this one. I need to find it somewhere for less than $45 though! Thanks for the recipes. We love crackers and these are way healthier and much cheaper than even the good brands I buy. Your hummus looks SO yummy too. I'm going to have to go make some of that!

Jason didn't pay $45 for it either! It just happened to be a 1977 version that he bought - I think for like $3? I was really excited about it!

We're trying to cut down on the processed stuff. (I was very disturbed to read my wheat thins box recently and find it contained HIGH FRUCTOSE CORN SYRUP!) So we're definitely going to be trying your recipes.

I love hummus but it never occured to me to make it. I always buy store bought. You amaze me!
